Red Banana outdoor overwintering advice

Hi all. My Red Banana tree got quite large this year after overwintering it indoors last year. It's now too big for me to place indoors so I'd like to insulate it and keep it outdoors this winter. I've never done that before. We've had about a dozen frosts so far but It's only gone down to 29 deg F.
I trimmed all the leaves off and wrapped towels around it the same night, but oozing sap completly soaked the towels. That was about 2 weeks ago and it's still oozing sap. liquid collects at the stem bases. I'm apprehensive about placing bubble wrap over it because I don't want the wetness to cause it to rot.
What should I do? Attached are 2 photos from yesterday. Thanks.
