I typed up a detailed response to this and lost it but here's my second try. Thanks for all the info. I didn't know that they die afterwards. I still wonder if the stalk was thinner before it went through the roof.
I ultimately ordered an Agave parryi var neomexicana x utahensis. The claim is that these have survived many z5 winters. I know some parryi vars have not. I will take my chances. It looks much like your Salmiana which has a nice full healthy appearance.
Also In the same order is a Echinocereus x lloydii cactus. It will take z5. It reminds me of a mini Saguaro.
Both should work in my z7.
