Jason your plants look great. That heirloom crape myrtle moniker, The Seven Sons Tree is just beautiful.
Exposed roots are very common with Trachycarpus. The roots are just trying to seek moisture. Thats how they do it. Cover with dirt or mulch before cold weather but water some first. You could even do it now.
Seeds (especially sabal minor) will ripen after being harvested in their green color. Alex-Atlanta z7b shared that here years ago and it works. Thanks for sharing some neat pics.
