Luigi I of Borbone (1773-1803) only king of Etruria.
Vittorio Emmanuelle III of Savoia, only king of Albania from the house of Savoy.
Henri de Valois, Later Henri III of France, King of Poland.
Stephen of Blois was the only King of the House of Blois to be King of England. John Balliol was the only King of Scots from that royal line.
Without any research, theses names came to mind :
Louis-Philippe of Orléans was the only member of his family to be King of the French , although the Orléans were a branch of the royal house who produced the kings of France.
But he would have started a new dynasty, which is what you are asking.
In France again, Louis XII was the only king from the Valois-Orléans dynasty, a branch of the Capet house.
Joseph Napoleon, only king of the Bonaparte dynasty of Naples and of Spain
Louis Napoleon, only king of the Bonaparte dynasty of Holland
Jerome Napoleon, only king of Westphalia
Joachim Murat, only king (of his family) of Naples
Maximilian of Habsburg was the only Emperor of Mexico from his family
And the fiction kings Friederich of Hesse, only king of Finland, Tomislav II (Savoy) king of Croatia, Mindaugas II (Wurttemberg-Urach) king of Lituania.
And there was that fellow (a crook) who proclaimed himself king of Andorra.
And there was that nice chap Bokassa who proclaimed himself Emperor of Centrafrique
