Old walled town of Mdina is definitely worth a look.
Marsaxlokk - picturesque traditional fishing village with lots of nice restaurants. You don't have to like fish to appreciate the place but it probably helps.
Day trip to Gozo highly recommended.
I enjoyed pastilla (Maltese pies), the best ones seem to be on the street corner bakeries, especially in Valletta. If you have a sweet tooth the local version of Sicilian cannoli are worth a go.
Look out also for their unique (non-alcoholic) bitter orange drink Kinnie. I'm not sure you're actually supposed to deploy it as I did (as a mixer for whisky) but it seemed to do the trick
