Sounds like the fixture looses it's home reference. When the fixtures first power up they go through a "homing" sequence which lets them find all of the zero/start points. This is what lets the fixture know where the first color/gobo is. At some point the fixture is losing its start point and this may be what is causing the colors to be off. I would first recommend that you open the fixture and check the color wheel for dust/dirt. If the wheel is dirty it will block the sensor and cause it to lose it's reference point. Another idea may be the cable. Since it is always the same fixture perhaps if it is the last fixture in line maybe the swap out the cable. Perhaps you could use a terminator on the end of the run. I have used the same controller as you in the past with limited sucess. Unfortunately the DMX refresh rate on some of the lower end controllers does not seem to be up to par. I hope this helped.
