Depending on where a patrolman is assigned, it can be a either a cushy job or it can be extremely dangerous but even the cushy job has its dangerous surprises and they always have to be on guard. The young and eager rookie becomes jaded with what they have to deal with. If more blacks seem to be targets, it's not because of their skin color, the statistics are that they are simply involved in more crime.
"According to the US Department of Justice, African Americans accounted for 52.5% of all homicide offenders from 1980 to 2008, with Whites 45.3% and "Other" 2.2%. The offending rate for African Americans was almost 8 times higher than Whites, and the victim rate 6 times higher. Most homicides were interracial, with 84% of White victims killed by Whites, and 93% of African American victims were killed by African Americans."
We don't know what was in the mind of the cop who killed Floyd. The other officers were not "white". They were Chinese, Hispanic and a light skinned black. Hardly what would normally be considered a racist group. For all we know, the cop and the victim might have had a bad history together that was a catalyst.
