Not having insurance is really problematic when something serious comes up but for common concerns around here, I'm seeing a lot of private "emergency" places springing up where the charge is reasonable and not much more than my co-pay. If you check what the doctor is actually getting paid between the co-pay and what they receive and accept from insurance, the straight out-of-pocket amount becomes almost affordable.
I suspect that your son's s/o is looking for a job more in line with her education and one that isn't easy to come by given by what you've told us she was applying for. She may have to lower her sights.
