There's about a dozen ballad selections on the Grade 2 list that might work - Yorkshire Ballad, Linden Lea, Greenwillow Portrait come to mind.

Also consider Flight oF Eagles by Del Borgo - can be done with snare, bass, and cymbals pretty easily.

I also like Connemara Sketches which is also snare/bass/cymbals focused but it's a bit longer and more complex.
