I usually have some type of rhythmic goal. For example: "improve students ability to read and count rhythms" It is broad enough to be easily accomplished in the eyes of an admin, but something that they can also easily see IF they actually come in to observe. My other go-to is usually something along the lines of having students perform in a large group, small groups and individually. Having students who are comfortable playing by themselves has always been an issue in our program, but it also helps develop listening skills. I push solo and ensemble a lot so that fits the bill as well.
