Look for the Alfred Essentials of Music Theory Books. These are designed exactly for this purpose. There are three levels. I've used them before and supplemented with flash card drills and some music game I found online (the newer versions of Finale have a few you can use to supplement). I also did some basic music appreciation stuff each day, mainly listening to a piece of music and discussing the composer. What I did was did a section (six weeks) on baroque, classical, romantic, 20th century (including movie music), jazz, and popular music (including musicals). I touched a bit on impressionistic between romantic and 20th. I took a composer or two a week and we listened to a different piece a day (or different movement each day if we wanted to listen to a whole symphony). Toss in a little historical relevance and you have a pretty simple class to put together.
