We started at school with the Behringer UMC204HD, it's not expensive, works great. I'd call it entry level, but still with some good preamps. It has 2 inputs.
At home, I have a PreSonus Studio 24c. This is a little higher-end than the Behringer and comes with the PreSonus audio software. Audacity works well enough for simple recording, but the PreSonus software has some cool features.
Both of those devices are USB interfaces, pull power through USB, and also provide 48v phantom power to your mics.
We recently upgraded the Band Hall to the Zoom F4 field recorder because I wanted to be able to get away from needing a computer. It's battery powered, records to a SD card, and has 4 inputs.
