If you're planning a few hundred per, you can get some really good mics in that price range. Look for something that is a "matched pair" or "stereo pair". I would recommend the Shure KSM137 Stereo Pair. Best bang for the buck, but will run you about $625. (Romeo Music!) Next level down would be the Rode NT5 Matched Pair at about $400.

After mics, the biggest thing to worry about is what kind of pre-amps you have in your recorder. Do some research on it; wide array of price ranges here.
