Best advice for dealing with discipline issues?

Today a student that has been problem in the past decided to play wrong notes on purpose (like playing E natural during ensemble concert Fs in fundamentals, then turning to his neighbor and smiling, etc). I lost my cool more than I would care to admit.
My general question, not just about this specific incident, is for experienced teachers.
What advice do you have for a young teacher dealing with behavior issues in the classroom? I seem to have good rapport with students, but when the occasional one rebels I end up taking it personally and getting visibly upset.
