Yep, pines as a group, are relatively fast growing. The annual new growth on the tips of stems, are referred to as "candles". These can be a foot or more in length. A foot of new growth per year is high for most conifer group types. Certainly more than for say, a spruce.
What types of holly did you have? Some forms are hardier than others.
I have a Dropmore Scarlet honeysuckle vine, that is similar to the one you have. Is your variety fragrant?
That Opuntia has proven its hardiness, at your -20F temp. I assume it was covered deeply in snow, when that low temp hit. So, it didn't experience that temp under the snow.
I mentioned previously, that my Bogue had some leaf browning, but the tree didn't go mostly deciduous. At least, going forward, you'll know that although southern mags (especially if already established), are hardy at the upper end of a z5 minimum...but it'll go nearly completely deciduous.
