I had a former coworker years ago who was a vegan or a vegetarian (can't remember now) and so was his wife. She's a chef and has published many cookbooks. Many of her recipes were made using homemade seitan. My coworker used to heat his various lunches from their leftovers every day and OMIGOD I'd be drooling all over the place.
