I love them, too! I’m not intolerant or allergic to anything I know of, fortunately. Try keeping a journal of what you eat and making note of the brand. Keep the ingredients part of the label. You might be able to identify the ingredients to avoid. Nuts, soy, wheat, and peas are common. Seitan, which is fermented wheat gluten, is the base of some fake meat. My husband and I gave up animal products several years ago. I don’t serve fake meat all the time, but at this point we’ve tried quite a few of them.
