The recent separate return of the spanish RC from the official visit to Cuba led to the usual nonsense culebrons.
a. that the couple was crossed, yeah, of course and one banged the door and took the first cab, pardon, the first plane;
b. that it was for security reasons, that they did not returned together, forgetting that they travelled together to Cuba.
Forgetting these nonsenses let's stick to the regency question.
If Felipe died while Leonor was a minor, I think it's safe to assume Letizia would be regent for her daughter.
But what if, say in an official visit, the plane with the RC would fall, who would be the regent.
The closest relative would be Juan Carlos, the emmerit king.
But he abdicated and left the throne "through the back door" with a poor level of approval and in the middle of scandals. Besides he suffers from very poor health.
Next comes Q.Sofia.
Yes, she was "just" the Queen-Consorte, but she always prooved to be "The Professional" of the family, with the highest sense of duty and rate of approval, a most dignified person, and with a very good health for her age.
Third choice, the "banned" Infanta Elena.
Curtsey with little brother Felipe, Infanta Elena was removed from the big picture and kicked from the Casa Real.
In spite of that, she seems to remain a very respected and popular member of the SRF with a high sense of duty, who might be willing to accept being hooked back to the scene ... only to be kicked out when she was not needed any more.
