Yes, that treaty recognised Monaco’s independence, but in case of the dynasty having no heir, the country would become part of France. That point was changed in a new treaty signed in 2002.
If Monaco ceased employing the royal House of Grimaldi, would they cease toe exist as a country?
No. The state's sovereignty was officially recognised by the Franco-Monegasque Treaty of 1861, with Monaco becoming a full United Nations voting member in 1993. Despite Monaco's independence and separate foreign policy, its defence is the responsibility of France.
