I wouldn't worry too much with the Marc Spector: Moon Knight series from the 90's, a lot of it is either poorly written or just plain weird (except for the amazing Stained Glass Scarlet arc).
The Moench series that started Moon Knight is very good but isn't collected in color yet, so you'd have to go with the Essentials.
I haven't gotten Countdown to Dark yet, but its collected in the Essentials too.
The newest run by Hurwitz, Shock and Awe, is a good jumping on point, but its more interesting to see Moon Knight develop from the dark and violent character in the Bottom to the more epic hero in Shock and Awe.
