I would not suggest making any turns with T-Tape. It will kink up at some point. It just isn't made to do that, I'm afraid. However, we do sell elbows if you really want to make some turns.
The other alternative is to use dripperline. It is more costly, but you can make circles out of it.
As to a pressure regulator, yes... you will need one. T-Tape is intended to operate at 10psi.
You might consider using 15 mil T-Tape. It is their heaviest and should last you a few years. The most popular spacing for the crops you've listed is 12".
