Hey Jeff! I would think that wind scenting on the last 20' of the trail would be ok. It would sort of simulate what the dog would do on an actual track. You may want to just make the blood trail a bit longer to make up for it. You could always wrap the deer leg in a plastic bag to eliminate the scent, and then just unwrap it for the dog when it finds it.
