Take this with a grain of salt as I am in my "baby steps" of tracking but from the books i've read
Assuming that you are using a leash.... if not start, at least through this training
I would think that the dog is not staying on the original deer track (which is more a root of the problem) So first I would work some artificial laid tracks where YOU know what is the real track then at some midpoint drag a dead carcass directly across the blood trail. When your 3 year old turns and goes off trail (which you will know if you have that point marked well with some visual marker to you) correct the dog so she does not change over to that "dead carcass" trail. Encourage her verbally at first to find the real blood trail again (doin this verbally will help her to "learn" so that when you get back in the field and you do NOT know when she's gettin off the trail she will correct herself) although if she doesn't correct through verbal go with the physical (take the lead and put her back on the blood trail)
When you get back on trail and find whatever reward you have put at the end praise the dog like never before... From what I hear a specially cooked Liver treat is a big great taste
