I never eat pork rinds in the US. Frankly, I'm embarrassed to do so. (The cashier will look at me and think what a bad, bad girl I am.) But here in Thailand, I eat them with wild abandon. They're called 'nang muu' or pork skin. You can get them /everywhere/. (People like them with their noodle soup.) I agree that they should have a crunchy skin layer. Unfortunately, that is rare here, despite the name. Out of 10 rinds in one small bag, you might get one with some skin. But worse is when it's too much skin. With hair and all. If I want boar bristles, I'll examine my paintbrush, thanks. Still, for less than $0.10 a serving, there's not much to complain about!
