I think she will, but you have a few things working against it being very soon. For one thing, it may seem like a long time to you, but to them it is not. Imagine being attacked and losing an eye. They may not be as articulate or deeply emotional as we are, but she was nearly killed and was injured. She has lost some of her sight and thus even more of her security. When they are not comfortable and feeling safe they lay much less. Also, it's going into winter when most chickens lay much less and she is spending energy healing her wounds. On the other hand, egg laying is part of a natural cycle that can't be postponed indefinitely. As long as you keep them safe and healthy, she will start laying again. Be patient and try to think of her as a regular pet until then. Try to make her feel safe. Since she's blind in one eye, one thing you can do to help her be at ease is to talk when you are around her so she doesn't get spooked by sounds that she has no idea where they are coming from. Glad she made it, good work keeping her going. She'll repay you when she can.
