Try some of those plastic easter eggs in the nests. Fill them with sand if you want (makes them heavier so they don't bounce out of the nest) tape them shut and wait. The birds can see the difference, but they're not particular. Once they figure out they can't eat those plastic eggs, they may quit.
It is possible there is some dietary deficiency after the injury. But yes, the egg-eater will teach this to all the others, and they'll have yolk all over their silly faces and you'll have nothing.
There are "egg-saving" nest boxes that keep the hen from reaching the eggs. Try a web search and see if you can find a design you like. I've seen them for sale on ebay, too. Check with commercial egg producers for their collection designs. The egg rolls down into a trough away from the bird so it can be collected from around back.
