You can make cheese (and yogurt) with pasturized milk but you have to buy and add the cultures back into the milk that pasturization takes away and handle it differently than fresh milk. You can go to New England Cheesemaking (.com) to get cultures and they have a very good book about making cheeses and things with pasturized milk (I think because they sell all the cultures..)
