I hadn't read the post below when I posted here before, but my understanding is that pasteurization kills the enzyme that allows you to digest the lactose properly. Which is why pasteurized milk makes me sick to my stomach and raw mild does not. My understanding also is (and I'm not an expert, so...) cheese and yogurt are better because they have bacteria in them that has started the digestion process for us before we even eat it. Sounds gross, but makes sense. There's good and bad to both, for huge production it's too hard to control raw milk and the contaminants it may come up with. On the whole though, raw milk is better for most animals to eat other than babies and the elderly because it is more complete. I don't think I could leave milk out in the open here for more than a day and not have it go bad, but I have seen cooling cupboards where air is drawn up from the basement and you can keep dairy, eggs and fruit fresh for several days in there. I think there's not a single easy answer, you have to learn the details of how our grandparents did things. Anyhoo, yeah, lactose & enzymes.
