I use to milk holsteins. You won't catch me drinking or getting near that milk if it sat out for a week in the summer. Not sure where you heard that. We have a small tub we use for that extra milk. In three days we have to dump it because of the smell. Gross!!! True pastuerizing, whether long or short pastuerization, is simply the heating up of the milk for a set time. This is done to kill any bacteria that may be present. Good or bad. Homogenized milk is done so the cream will not seperate from the milk. What I don't like about store bought milk is that they do not just pastuerize. They remove milk fat (yes, even from the whole milk) so you are not getting a true product. It may say whole milk, but it's not. This is not a touchy or volatile subject to me it is just one that I know a lot about. When your paycheck depends on the milk your cows produce you need to know.
