Curtseying to Prince Henrik would mean that he has been (de facto) given the status of King consort. I have seen the DoE bowing to the King of Spain and the Spanish Infantas do not curtsey to Princes consort.
Crown Princess Mary curtseying to the Prince consort of Denmark is an innovation in royal protocol.
But it would be expected that she curtsied to the Queen of Denmark, even is she is her sister.
