The was a priory in Preston - or "Priest's town" in the Middle Ages with the town always having a strong Catholic tradition.
The club's crest is derived from the town's coat of arms. The lamb is the Lamb of St Wilfred, under which are the letters PP (originally Princeps Pacis - Prince of Peace or nowadays Proud Preston).
The football club used to have PP also (until the 60s I think) and apparently for copyright reasons the club put PNEFC under the lamb instead.
There's some more info here and here on the crest.
