I just found a really nice book on cow breeds. It's called the complete cow. It's written by Sara Rath and you can buy it from Overstock.com and Amazon.com (probably Barnes and Nobel too, but I didn't check there). Sara also has the complete pig and there are lots of really nice horse books with lots of pictures. Sheep and goats are not my specialty.
