I am in the process of trying to find out as much as possible about trail riding in the general eastern washington area myself. What I can tell you about Grant County is that you should try Northrup Canyon (a WA State park next to Banks Lake, Highway 155 I think?). There is also a trail to the top of Steamboat Rock that you access by going in through the main gate. There are also a few horse camps in the Wenachee NF if you are interested.
