Posted by Gleeva Kolb 4 cups cooked day-old rice Saute meats and cooking onion. Add rice, salt and pepper. Mix well and stir fry. Add soya sauce or black bean sauce to taste. Add vegetables and stir fry 3 or 4 minutes. Add sliced egg to rice. Stir lightly and serve hot.

FRIED RICE
1 small onion or 2 scallions chopped
1-2 cups cooked meats,julienne or diced (ham, pork, chicken, bacon, shrimps or sausages, anything you have handy in the fridge)
1/2-1 cup of diced vegetables (green peas, celery, carrots, green beans, water chestnuts, bamboo shoots, mushrooms, etc.) (again anything you have in the fridge)
2-3 eggs beaten (optional)
1-3 Tbsp soy sauce or black bean sauce.
1/2-1 tsp. salt
pepper
Heat oil. Pour in beaten eggs. Cook until just set. Roll up and remove from pan. Set aside and slice in thin strips across roll.
