Marla's TNT Cheesy Beans and Rice
2 cups brown rice (uncooked)
2 cups cooked, chopped chicken
2 pkg taco seasoning mix
1 cup salsa (or more to taste)
2 cans Kidney beans
2 cups cheddar cheese
Cook brown rice according to package directions. 2 cups rice should
call for 4 cups water, but I ended up using close to 6 cups or so...
When rice is most of the way cooked, add a little extra water (if
needed) plus the chicken, taco seasoning, beans and salsa. Continue to simmer and
When rice is completely cooked, add cheese to mixture and stir.
Divide between two 8x8" dishes. Add additional salsa and cheese if desired/
Bake until cheese melts
