Fettuccini Alfredo with Spicy Chicken
• 16 oz. Fettuccini
• 1 lb. Chicken Breast
• 2 cups Heavy Cream
• 1 ˝ cups Grated Parmesan Cheese
• 2 tbsp. Olive Oil
• 1 tsp. Dried Chipotle Spice
• 6 tbsp. Butter
• Water
• Dash of Salt
• Parsley (optional
1. Boil a large pot of water and add a dash of salt. Cook your fettuccini according to the package directions. Usually 8 to 12 minutes for dry fettuccini. If you're using fresh fettuccini it will take a few minutes less. Drain and set aside.
2. Step 2
Heat the olive oil in a large skillet. Chop the chicken breast into bite size chunks and cook the chicken in the skillet until done and remove it from the heat.
3. Step 3
Sprinkle the chipotle spice on the chicken while still warm. Mix it well to coat each piece and set it aside.
4. Step 4
Pour the cream into a large sauce pan on low heat and add the butter. Stir until the butter is melted and mixed with the cream.
5. Step 5
Slowly stir the parmesan cheese into the cream mixture. Stir constantly and heat for approximately 5 minutes, until the Alfredo sauce is creamy and the cheese is mostly melted. Remove from heat.
6. Step 6
Add your spicy chicken chunks to the Alfredo sauce and mix thoroughly. The recipe will thicken more upon standing.
7. Step 7
Depending on your taste, you can either pour the sauce over each individual plate of fettuccini or pour the Alfredo sauce onto your fettuccini and toss the noodles to mix. Makes approximately six servings.
8. Step 8
Sprinkle with additional parmesan cheese and/or parsley before serving as desired.
