Wyoming Baked Beans
1 pound great northern beans overnight in cold water
1 cup white onion chopped
4 slices bacon diced
2 tablespoons sugar
1 tablespoon dry mustard
1/2 teaspoon cayenne pepper
2/3 cup molasses
2 tablespoons cider vinegar
1&1/2 cups tomato juice
Drain beans and place in large saucepan then add fresh water to cover beans.
Bring water to boil over medium heat then reduce heat and simmer uncovered for 1 hour.
Drain well then preheat oven
to 250 then place beans in casserole dish.
Stir in onions, bacon, sugar, mustard, cayenne, molasses, vinegar, tomato juice and 1 cup water.
Bake for 1 hour stirring occasionally.
