Bacon-Broccoli Rigatoni from David
One bite of this rigatoni medley and you'll be bacon for more. The combination of bacon, broccoli and mozzarella blend together in this palate-pleasing pasta dish.
8 oz. (3 cups) uncooked dried rigatoni
8 slices bacon, cut into 1-inch pieces
2 cups broccoli florets
1/2 tsp. finely chopped fresh garlic
2 cups (8 oz.) mozzarella cheese, shredded
1/4 cup freshly grated Parmesan cheese
1/8 tsp. ground red pepper
1/4 cup chopped fresh parsley
Cook rigatoni according to package directions. Drain; set aside. Meanwhile, in 10-inch skillet cook bacon over medium-high heat, stirring occasionally, until bacon is crisp (6 to 8 minutes). Reduce heat to medium. Add broccoli and garlic. Cook, stirring occasionally, until broccoli is crisply tender (4 to 5 minutes). Add cooked rigatoni, mozzarella cheese, and Parmesan cheese and ground red pepper. Continue cooking, stirring occasionally, until cheese is melted (3 to 5 minutes). Sprinkle with parsley.
