World Famous Chili
2 to 3 lbs ground beef (leaner the better)
1-2 large yellow onions diced
3-4 stalks celery diced
2 large cans stewed tomatoes
3 16oz cans dark red kidney beans
Seasonings
1-2 teaspoon Worcestershire sauce
1-2 teaspoon salt
1 teaspoon pepper
1-2 teaspoon garlic powder (not salt)
1-3 Tablespoon chili powder (depends on how
hot you like your chili)
1/2 teaspoon cayenne pepper
1-2 teaspoon parsley flakes
(the seasoning should be to your taste add or
subtract to suit your taste buds)
Saute diced onions and celery in small amount olive oil or veg. oil,
in a large frying pan, until tender, add ground meat and seasonings
and brown until all pink has disappeared. If pan is large enough, add
tomatoes and beans and let simmer for 1/2 hour on low heat.
Otherwise put tomatoes and beans in a separate pan and warm and add meat and simmer for same amount of time. This makes a large amount, but can be cut back by reducing amount of meat and cans of tomatoes and beans.
Adjust amount of seasonings accordingly.
Tastes good first time, but is better next day too. Serve with fresh
bread and butter and salad.
