Linguine with White Clam Sauce
1 pound linguine noodles
1/4 cup olive oil
2 cloves garlic, minced
1 cup fresh mushrooms, sliced
1/4 cup onion, diced
32 oz. canned minced clams with juice
1/4 cup dry vermouth or white wine
1/3 cup fresh parsley, chopped
1 tsp. dried oregano
Pepper to taste
Grated Parmesan Cheese
Heat oil in a skillet and cook garlic, mushrooms, onion, and
minced clams for several minutes. Add vermouth, parsley,
oregano and pepper and cook for several more minutes. Meanwhile
cook linguine noodles according to package directions. Place clam
sauce over pasta and toss. Sprinkle with Parmesan cheese.
You can probably use apple juice in place of the white wine if you simply cannot tolerate alcohol.
