Granted, my kiddo is 19 but there was still a lot I had to attend to before she left home. A few of the things I learned were to prepare for the next week on the weekend. Laundry, housecleaning, and cooking, so the week started out relatively fresh. I went to the cleaners or made Target runs on my lunch break. I'd make doctor appts and pay bills on my 10 minute work breaks. If she had a doctor appt., I'd schedule it for late in the afternoon and work through lunch to make up my time. I used to go to the gym after work and I'd literally walk in, change clothes and walk back out, because if I sat down for even a minute it was over and I wouldn't want to get back out. I quit doing that because the job I had last year had such a big work load and was so mentally taxing that I was exhausted at the end of the day and just wanted to flop on the couch when I got home, but that was the best way I came up with if you are looking for some "you time" after work.
A couple of tips on cooking, on Sunday I'd start marinating meat and put some in the crockpot and/or bake some as well and have that ready to go to help out with meals for the week and just have veggies to do after work. Say for instance, a 3 lb package of chicken, I'll do 1/2 in the crockpot with Mexican flavors & the other half gets baked for bbq chicken or whatever. This was somewhat taken from Robin Miller on Food Network. While I don't think her recipes are stellar, I like her idea of "cook once, eat twice". Earlier this week I was making hubby a salad (I'm personally not big on veggies) and cut up extra zucchini & celery and put them in a baggie in the fridge and made extra toasted walnuts so they are ready to go at anytime. The next salad was easy, just open the box of lettuce, add in sprinkles of goat cheese, and the precut veggies & nuts with a few extras and it was done in a flash.
