I still want to give Steve and Joe at A Cut Above here in Kingston a fair try, but I'm thinking more and more that I'll be making the trek back to John's shop again next year. $12 haircut + $8 extra for shaved high & tight, $12 face shave, $18 head shave (though for whatever reason he doesn't advertise shaving services on his sign), and exactly the quality service you describe (and no paper neck strips, always comfortable cloth towels). John took early retirement from West Point to spend his time taking care of people the way he wants to without the rush-production pressures. No "agenda" here, either in haircuts or in conversation. He'll pay as much attention to the details of what a kid wants in a skater cut as to his signature horseshoe flattops. He's a lay preacher in a pretty conservative Bible church, but not at all pushy and always respectful of different beliefs and lifestyles, and as happy discussing Fellini films as classic cars.
