You did not mention where you are located, but Meadows Mills in NC still builds and works on mills. When you say "dress" your stones I assume you simply need your rocks sharpened. If that is the case, I would suggest that you sharpen your stones yourself. A good, hard pick will "rough up" your stones and really do a good job of sharpening your stones. I keep the stones on our mills sharp and work on other mills from time to time and know that as long as you take your time and work at it carefully, most anyone can sharpen the stones themselves.
