That is why you see the top physiques of today have better developement than their ancestors. Todays average gymrat will put Eugene Sandow to shame simply because of the multiple set system and better nutritional awareness. Now...if you are talking about certain training methods like how the Mentzer boys advocated and how Dorian Yates trained, those are not TRUE one rep systems. They did their warm up sets, building up to their main lifting set then yes, they repped out with that heavy set, taking it to failure, maybe 6-8 reps and stopping there, completing an actual cycle of around 3-4 sets per exercise. : why doesn't anybody use the single set? I could see the point if
: you're doing 5 or 3 reps... you'd need to do multiple sets I
: suppose but for strength training at 8-12 reps it's ideal.

Back in the 20-30's and earlier, they did use the single set system, however someone named Joe Wieder came along and figured out that while yes a single set was good for you, it was limiting your gains. While he did not invent the multiple set system, he did bring it to the forefront that adding a few more sets was even better. One set warms the body up getting it ready for added stimulation. Why stop at one set when your body can handle more?
