Nigel, that tree has developed a sparse open habit because it has a lot of competition with the surrounding shrubs and trees in a dry garden receiving no water other than the rainfall. Rainfall here is virtually nothing in summer and I think it will be difficult to replicate those conditions in the UK. Still if you plant a lot of other plants around it, and try to keep it as dry as you can it may develop that way. Good luck. And I'd go ahead and plant it now - don't wait.
