it would probably help if you could tell us what species of euc you have seed of---there are over 500 different types and none are really adapted to really cold climates---michigan, alaska, montana or even higher elevations of california. for example, "cold" winters by australian standards would probably be pretty mild by most parts of north america. also, texas being a reasonably large state there is big difference between the climate (and therefore what plants might thrive let alone survive) of alpine, say and corpus christi so it would help to know where you live. cold climate in australian terms would probably indicate minimum temps of -7c/20f. as in USDA zones 8/9. most can take hot summers but some may not be happy with the humidity of a gulf coast summer and others would not like imestone soil in parts of west or central texas. various eucs have been grown successfully in parts of texas how you will do in your part of texas may require some more details from you.
