OK,first go to the Hardy Eucalyptus Page, then to Cultural Information for Growing Eucalyptus in Cool Climates, then to if the Euc Freezes.
I've never seen a euc freeze, so I'm not qualified to comment, but from reading this the trimming you are proposing doesn't seem important.
