If the motor is dimmer controllable, then a DMX-512 dimmer that can handle highly inductive loads and possibly adding some extra "easy" load to same channel could do the job or not at some controlling range. If your motor needs to use variable frequency drive, then you need to get such device. This kind f devices can be typically controlled with 0-10V signal or 4-20 mA current loop or similar control. So for DMX-512 controlling you need to have suitable adapter that converts the DMX-512 value to analogue voltage/current as needed by the variable frequency drive speed input control. First thing to know on that particular motor is the exact type of the motor used in the application. Speed on some motors can be controlled with a dimmer type device, many AC motors need to be controlled on variable frequency drive device and speed of some motors can't be practically changed. Also the type of load connected to motor can have effect on how well the speed of it can be controlled.
