It just appears as XML in your text message, which you can cut and past from. I've never been a user of vCards, so please forgive my ignorance.
The Address Book app in OS X allows you to export vCards - so it must be ok.
If you want something to specifically deal with them, I bet there is an iPhone freebie app in the app store.
