Agree with Brians suggestion of the Garrett AT Pro, good land detector and can be used in the water too.
Not sure how good the headphones are with it but you can get an adapter to use other brands of headphones.
I assume that you can wear the large headphones over your hearing aids. If so, I would think that a good quality (made for metal detecting) headphones should work for you. I have a set of Grey Ghost's that are very loud, I have to turn them down or they hurt my ears.
The AT Pro also has alot more visual information than the Ace 250 or 550. Scratch the Viper from your list.
It would sure be nice if you could try a metal detector and headphones before buying.
